Schlafly Beer’s Highland Square location (907 Main, Highland, Illinois) has officially entered its next chapter. Since January, the Illinois brewpub has been operated by Highland-based restaurateur Oscar Fariña under a licensing agreement. While Schlafly continues to provide the beer—with its year-round staples and seasonal releases still flowing on tap—Farina has taken full creative control of the menu, kitchen, and day-to-day operations. And while the name remains the same, what’s coming out of the kitchen is a very different story.
